USU's new live mascot Thistle gets an Aggie Ice Cream flavor
LOGAN - Utah State University celebrated its new live mascot, Thistle, with a new Aggie Ice Cream flavor on The Quad on Friday, according to a USU Today story posted Oct. 31.
More than 1,200 students waited in line for one of 500 free cups of Thistle's Highland Swirl, a salted caramel ice cream with a caramel ribbon and blonde brownie bites, the university said. USU's aviation program also dropped 50 samples by parachute from a helicopter over The Quad. The flavor is available at both Aggie Ice Cream locations, and the USU Campus Store is now selling Thistle plush toys.
Thistle is a pair of Highland steers born in April, according to USU Today. The mascot will begin attending some USU community events in fall 2027.
Why this matters
Families can try the new flavor now, and Thistle is expected at USU community events starting in fall 2027.
